Navajo Tacos & Scones...

Navajo Tacos

1 pkg. Taco Seasoning; cook as directed on the pkg
1-2 lbs. Beef (I used the Deer meat we had in our freezer from my brother. It was yummy.)
1 medium size onion; saute with meat
2 Roma Tomatoes; diced
1/2 lb. Medium Cheddar Cheese; shredded
Romaine Lettuce or Spinach; cut up into chunks or shredded
1 can olives; sliced

**Serve with Hidden Valley Ranch Dressing or Homemade Salsa on top of the Navajo Tacos.

Scones

2 tbsp yeast or 2 pkg. yeast
1/4 c. lukewarm water
2 c. boiling water
2 tbsp. shortening or margarine
5 c. flour; approximately (I use bread flour)
1/3 c. sugar
2 tbsp. butter
2 eggs
1 tbsp. salt

Directions: Dissolve yeast in 1/4 c. lukewarm water with 1/4 tsp. sugar. Set aside. Thoroughly mix 2 c. boiling water, sugar, shortening, butter, and salt. Cool to lukewarm. Stir in dissolved yeast and eggs. Mix well. Add flour as necessary to make dough easy to handle. Knead for 5 minutes. After that is done, put in an oiled bowl. Cover. Refrigerate overnight. When ready to use make into desire size of balls and work the dough with your fingers stretching it to the size of scone you want. Cook in oil on the stove in a pan. Let the oil get hot on Hi heat first and then do a tiny test ball to see if the oil is hot enough and then once the oil is ready place your scone in the pot and cook on medium or medium hi according to how fast the scone is being cooked. If the oil cooks it too fast turn down the heat so it won't be doughy inside. Just cook it until it looks golden brown and starts to get air bubbles in it. Serve with cream honey, jam, honey butter, honey, or with Navajo Tacos. You can freeze it up to 4 days.

Enjoy! These are so yummy... We love having them for breakfast along with Navajo Tacos. This is one of my favorite meals.

Bulkogi-Korean Lettuce Wraps



1/2 c. soy sauce
1/4 c. water
1/2 c. sugar
3 to 4 green onions or 1 small yellow onion, chopped
1/4 tsp. garlic, minced
1 tbsp. grated ginger (I have substituted ground ginger)
1 tbsp. sesame oil (I have used canola oil or white wine vinegar)
1/4-1 tsp. cayenne pepper
2 tbsp. sesame seeds
1 to 2 lb. thinly sliced beef or leftover roast meat
1-2 cups cooked rice (I use my rice cooker)
Romaine Lettuce Leaves (You can buy good ones for a cheap price at Sam's Club)

Mix first 9 ingredients and marinate beef in it overnight or at least for 30 minutes. Stir fry beef until cooked thoroughly. Add rice (add more rice if you want a thicker texture, I normally do
2 cups of rice) to beef marinated in the pan. Stir well. Roll up beef rice mixture in romaine lettuce leaves.

Steak Quesadillas


3-4 medium size onions
1/4 c. butter
2 medium size steaks seasoned with creole seasoning (spice of your choose), sliced or cubed
Hot pepper cheese, Mozzarella, or Monterrey jack
1 small green pepper, diced
20-24 Flour Tortillas (for this recipe I always make homemade tortillas)
Salsa

Flour Tortillas

4 heaping cups flour, Belza Brand (I just use my bread flour)
1 teaspoon salt
1 teaspoon baking powder
1/4 c. vegetable oil
1 1/4 cups warm water

Mix all ingredients and knead for 5 minutes. If dough is too sticky, wet your hands slightly and continue working with dough. Make into balls. Roll out with a rolling pin. Doesn't matter the shape. I normally roll out the other balls while some tortillas are already being cook on the stove. Put a small amount of canola oil in a pan to get started with so they won't stick to the pan. Flip until a little brown on both sides. Put on a paper towel to soak up excess oil.

**Tip: Make sure there are enough top and bottoms when making Quesadillas.


Melt butter in a pan on low heat. Stirring occasionally to help it melt.
Cut the onions into thin slices or use your food processor to do the work for you.
Add onions to melted butter. Let cook on low heat for an hour and make sure they are no longer crispy after the hour of cooking.
Meanwhile put the steaks on the grill with seasoning them (I used the leftover meat we had from our Sunday roast dinner), cut into thin slices or cubed the meat.
Diced the green pepper and grate the cheese of your choice.

Assembling the Quesadillas:

Flour Tortilla
Onions
Steak
Green Peppers
Cheese
Flour Tortilla

Once you have put everything together. Cook on your sandwich press on low heat until cheese is melted and it shrinks in size. Serve with Salsa. Enjoy!

Sausage Soup

2 cans cream of chicken soup (with 1 can of milk)
2 cans cream of mushroom soup (with 1 can of milk)
1 can green beans, undrained
1 can corn (drained) or 2 c. Frozen corn with Juice
2 bay leaves
1 tsp. creole seasoning (for a spicy taste)
1/2 tsp. rosemary
1 roll Hot Sausage
1/2 tsp. pepper
1 can pinto beans (drained & rinsed)
1 small onion
2 medium size potatoes; diced

Directions:

Cook sausage on medium heat. Crumbled it and cook until browned. Pat on paper towels. Put everything else along with sausage into the crock pot cook on low heat or until the potatoes are done on high heat. I prefer cooking it on low heat so it brings out the flavor with all the spices mix together.

I also made for dinner last night some homemade dinner rolls to go with the soup. Here is the recipe for those. This dinner roll recipe is one of my favorites. My friend Martha taught me how to make this recipe. Now every time I make these rolls I think of our friendship and the good times we shared together when she lived next door to us in our old apartments that we lived in.

Dinner Rolls

2/3 c. butter
1/2 c. sugar
1 1/2 tsp. salt
1 yeast cake (1 tbsp yeast)
4 c. flour
1/2 c. warm water
1 c. mashed potatoes
1 c. scalded milk
2 eggs-beaten

Directions:

  • First scald the milk, take off the stove, put in the mixer
  • Add butter, sugar, salt, & potatoes to the milk, mix
  • Melt yeast in water with 2 tsp. sugar, let it double in size
  • Add beaten eggs & yeast to milk mixture (first let the milk mixture cool down)
  • Add flour for medium dough-by putting 2 c. flour in with beaters, then by putting the rest of the flour in by hand/spoon.
You will want the dough to be a sticky texture when it is finished. Transfer from mixer to a greased bowl and cover with plastic. Store in the fridge overnight.

Let it stand for 30 minutes out of the fridge. Roll out dough but make sure you don't add to much flour to the dough. Once the dough is rolled out cut circles out of the dough. Put melted butter in the middle of the circle then fold in half. Put on a greased cookie sheet next to each other in a row. Let them raise for 2 hrs. in a warm place. Bake at 400' for 15-20 minutes or until they are brown on top. Keep a close eye on them because they cook really fast depending on your oven temperature.

Chicken and Biscuits...



1 can cream of chicken soup
3/4 c. sour cream, divided
2 c. chopped, cooked, chicken
1 pkg.(16 oz.) Frozen mixed vegetables or 2 c. fresh vegetables (I used fresh broccoli and cauliflower)
1 c. shredded mild cheddar cheese
3 tbsp. Milk
1 c. all purpose baking mix (Bisquick)

Directions:

Heat oven to 375'. Mix soup and 1/2 c. sour cream in 8 inch square baking dish. Stir in chicken, vegetables, and cheese.

Stir milk and remaining sour cream into baking mix. I added a little extra water so they weren't so thick. Drop by heaping tbsp. into 6 mounds on top of chicken mixture. Bake for 35 minutes or until biscuit are golden brown and chicken mixture is hot and bubbly.

So I asked Mike what he thought after taking 2 bites and he told me I had to wait until he was all finish eating. So at the end of the meal I asked what he thought and he said he would give it 4.2 stars out of 5 stars. He said it was good but it would have been better if it didn't have the sour cream flavor to it. He really doesn't care for sour cream but I had it in the fridge and thought this was a good way to use it up and that is what I did so it didn't go to waste.

What is to come?

I decided I would start a separate blog with all of my recipes. I love to cook. It is one of my favorite things that I love doing. I find it relaxing and allows me to have time for myself. I especially love having my husband try the things I cook. I love to see his face light up or tell me what I needed to change in the recipe or sometimes to never make that recipe again. I will post some of my favorites, easy, healthy, spicy, or new recipes I am trying out for the first time. I look forward to sharing my love for cooking with you all.
